Nothing is more frustrating to a scratch cook than a recipe that calls for "a can of this-or-that." Scratch cooking means cooking from the basic ingredients. And, when a recipe calls for a can of chili, we'd rather make our own chili from dried beans instead paying a buck fifty for a 15-1/2 ounce can of Stagg's.


If you're like me, you want to know who is the lone hold out. That prize goes to the chili con carne recipe, which stayed the same. Chicken gumbo remained static too; however it went from 14 servings to only 10 servings while still using the same ingredients. Therefore, its portion size - and calories per serving - indeed grew.


Chili Con Carne: Brown 1 lb. hamburger in 3 Tbsp. oil. Add 1/4 cup minced onion and cook 10 minutes. Add a 15 oz. can of kidney beans and a can of tomato soup. Mix in 2 Tbsp. chili powder, 1 Tbsp. flour; 3 Tbsp. water and 1 tsp. salt. Cook over low heat and stir frequently. Serve hot, with crackers.


The slow cooking process allows for the use of cheaper cuts of meat. Normally some cooks try to avoid those sinewy, fattier, coarser cuts of meat but for the particular method of cooking used it is an advantage. The sinews break down over the long cooking time and impart a fabulous texture to the dish and a depth of flavour that is most delectable.


Marinating infuses meat, poultry and fish with flavors limited only to your specific ingredients. Aside from this, the other variable of the marinating process is time. They say the longer the meat soaks the more flavors easy chilli con carne recipe it gets but it doesn't hold true to all food. Seafood should be marinated for the briefest time, anywhere from 20 minutes to an hour. Fish has a more delicate texture and marinating them in acidic mixes for longer periods will cook the fish.


While you might enjoy slow cooker vegetarian chili, it is ideal to consider other types of ground meat when preparing this meal. Ground turkey and chicken are healthier. It can be challenging to tell the difference due to the chili seasoning, but turkey and chicken can also add a unique flavor to any chili recipe. If you don't mind eating a vegetarian meal, you can also skip the meat altogether.


The next most important question about chili is beans. Should those beans be in the chili or should they not. Believe it or not but there are people in Texas who would fight you if you tried to put the beans in. But there are others who love the beans in the chili.


E. coli O157:H7 is a potentially deadly bacterium that can cause bloody diarrhea, dehydration, and in the most severe cases, kidney failure. The very young, seniors and persons with weak immune systems are the most susceptible to foodborne illness. Whatever other type of ground meat you have, please make sure you cook it thoroughly.
