Saute' a onion, celery and carrots during the oil until all the onion becomes translucent. Coat the meat pieces inside the flour. Cook the meat beef casserole red wine all the onion mixture until such time as just browned all over the place. This will include a good flavor on the stew. You could only add it towards the pot without browning if you are in a dash, but I suggest that you take the matter of minutes required for this task. It will present better flavor ultimately.


Shrek is a movie still quoted by my family. Every time my wife and I beef casserole we talk about making "a mean weed rat stew". Whenever one of us gets in a panic we quote Donkey and say "I don't have any toes! I need a hug." And we often speak of "layers" with onions and ogres.

On a small boat, space is always at a premium, and if your provisions are stacked efficiently, it makes all the difference in the world.


Char 2 of the onions (reserve the other onion for bowl preparation) and ginger over an open flame to release essential oils and fragrances. They do not need to be blackened - only char to soften. (This can be done under a broiler if no open flame is available). Remove skin and blackened pieces from onions and ginger, remove stem ends from onions and discard. Set aside.

2 pounds of chuck or rump roast cut into 1 inch cubes. You can also purchase stew beef at the grocery. This is usually provided already cut into large chunks. I will usually cut each of these chunks into smaller, bite sized pieces.
